Str\u00f6 30 g av r\u00e5sockret \u00f6ver bananskivorna. St\u00e4ll in i ugnen och baka tills bananerna v\u00e4ger 80 g. Det tar ca 10 minuter. Bananerna ska f\u00e5 en fin gyllene f\u00e4rg och bli h\u00e4rligt karamelliserade. H\u00e4ll under tiden mj\u00f6lk, gr\u00e4dde och de \u00e5terst\u00e5ende 85 g av r\u00e5sockret i en kastrull p\u00e5 medelv\u00e4rme. V\u00e4rm till 40\u00b0. Ta kastrullen fr\u00e5n v\u00e4rmen, r\u00f6r i glukossirapen och vispa ner skummj\u00f6lkspulvret. Vispa tills allt blandats. Dela och skrapa ur vaniljst\u00e5ngen och l\u00e4gg ner i mj\u00f6lkblandningen tillsammans med kanelst\u00e5ng, nejlikor, stj\u00e4rnanis och krossade kaffeb\u00f6nor. V\u00e4rm p\u00e5 medelv\u00e4rme till 90\u00b0. L\u00e5t sedan st\u00e5 och dra 5-10 minuter. Sila ner blandningen direkt i en mixer och l\u00e4gg i de avsvalnade, karamelliserade bananerna. K\u00f6r i mixer till fin konsistens. L\u00e5t st\u00e5 i kylen n\u00e5gra timmar s\u00e5 smeten blir riktigt kall innan den k\u00f6rs i en glassmaskin i 45-60 minuter. L\u00e4gg \u00f6ver glassen i en form, t\u00e4ck med plastfolie och l\u00e5t st\u00e5 i frysen n\u00e5gra timmar tills glassen k\u00e4nns klar.
