Kolla om f\u00e4rsen k\u00e4nns lagom salt.<br \/>\nSk\u00f6lj, ansa och skiva purjol\u00f6ken. Sk\u00f6lj salladen och sk\u00e4r den tv\u00e4rs \u00f6ver i strimlor. Sm\u00e4lt sm\u00f6ret i en stekpanna och l\u00e4gg i purjol\u00f6ken och fr\u00e4s n\u00e5gon minut. Tills\u00e4tt den skurna salladen och v\u00e4nd runt. Salta och peppra lite l\u00e4tt. Bred ut blandningen i en smord eldfast form, sl\u00e5 p\u00e5 vinet och st\u00e4ll \u00e5t sidan.<br \/>\nTorka av fiskfil\u00e9erna och l\u00e4gg ut dem p\u00e5 en sk\u00e4rbr\u00e4da. R\u00f6r i mj\u00f6let och sp\u00e4d med fiskbuljong. L\u00e5t sjuda n\u00e5gra minuter. Tills\u00e4tt vin och gr\u00e4dde. N\u00e4r fisken \u00e4r klar sl\u00e5r man av buljongen som bildats och h\u00e4ller ner i s\u00e5sen. Smaka av med salt, peppar, vin eller citronsaft. Sl\u00e5 s\u00e5sen \u00f6ver fiskfil\u00e9erna och garnera med hackade r\u00e4kor och finskuren dill. Servera g\u00e4rna lite av s\u00e5sen i en kanna vid sidan om.
