Klipp bort \u00f6verfl\u00f6digt papper och sm\u00f6rj kanten med lite sm\u00e4lt sm\u00f6r. Krossa pepparkakorna till sm\u00e5 smulor i en mixer eller matberedare. Sm\u00e4lt sm\u00f6ret och blanda med kaksmulorna. Tryck ut blandningen i formen och st\u00e4ll in i frysen n\u00e5gon timme.<br \/>\nTill fyllningen separeras gulor och vitor och l\u00e4ggs i varsin bunke. Vispa gulor och socker p\u00f6sigt. R\u00f6r f\u00e4rskosten s\u00e5 ev klumpar f\u00f6rsvinner och tills\u00e4tt sedan \u00e4ggvispet. Blanda till en j\u00e4mn smet. Vispa gr\u00e4dden med saffran och v\u00e4nd ner. Vispa \u00e4ggvitan till ett fast skum och v\u00e4nd f\u00f6rsiktigt ner i smeten. H\u00e4ll hela h\u00e4rligheten ovanp\u00e5 pepparkaksbotten och st\u00e4ll tillbaka i frysen. L\u00e5t den frysa 4-5 timmar eller \u00f6ver natten. Om man vill kan man fylla en utstickare, ca 8 cm i diameter, med smet och frysa separat, f\u00f6r att f\u00e5 lite h\u00f6jd p\u00e5 t\u00e5rtan (se bilden).<br \/>\nRosta n\u00f6tterna i ugnen i 190 grader ca 5 minuter. Sm\u00e4lt under tiden sockret med n\u00e5gra droppar citron i en panna tills sockret sm\u00e4lt och blivit gyllenbrunt. Tills\u00e4tt de rostade n\u00f6tterna och r\u00f6r om. Sl\u00e5 ut p\u00e5 ett bakpl\u00e5tspapper och l\u00e5t svalna. Hacka sedan i lite mindre bitar.<br \/>\nTa fram glasst\u00e5rtan ur frysen n\u00e5gon halvtimme f\u00f6re servering och st\u00e4ll i kylen. N\u00e4r det \u00e4r dags att servera efterr\u00e4tten tar man fram utstickaren, trycker ut glassrundeln och placerar den p\u00e5 t\u00e5rtan.
