V\u00e4rm till 37\u00b0 och tills\u00e4tt sedan kokosgr\u00e4dden och 1 dl vispgr\u00e4dde, lite i s\u00e4nder. V\u00e4rm upp till ca 40\u00b0 under st\u00e4ndig omr\u00f6rning. L\u00e5t svalna och st\u00e4ll i kylsk\u00e5pet n\u00e5gra timmar eller \u00f6ver natten.<br \/>\nVispa resterande gr\u00e4dde och v\u00e4nd ner i den kalla glassmeten och blanda v\u00e4l. H\u00e4ll allt i en glassmaskin (k\u00f6r ev i tv\u00e5 omg\u00e5ngar) och k\u00f6r i ca 45 minuter. L\u00e4gg i plastad bunke och st\u00e4ll i frysen i v\u00e4ntan p\u00e5 dekoration.<br \/>\n<em>Karamelliserade kokosflingor:<\/em> H\u00e4ll vattnet i en kastrull eller stekpanna och s\u00e4tt p\u00e5 medelvarm platta. Tills\u00e4tt sockret och l\u00e5t sjuda tills sockret sm\u00e4lt helt. R\u00f6r hela tiden tills det b\u00f6rjar anta sirapskonsistens. Tills\u00e4tt kokosflingor, vaniljessens och salt och r\u00f6r hela tiden i ca 7 minuter tills all v\u00e4tska f\u00f6rsvunnit. Justera ev v\u00e4rmen p\u00e5 plattan efter hand.<br \/>\n<em>Bj\u00f6rnb\u00e4rss\u00e5s:<\/em>V\u00e4rm de frysta bj\u00f6rnb\u00e4ren med vaniljsockret i en kastrull tills b\u00e4ren sm\u00e4lt helt. Smaka av med str\u00f6socker.<br \/>\nTa fram glassen och l\u00e4gg p\u00e5 ett fat ca 30 minuter innan den ska \u00e4tas. Str\u00f6ssla \u00f6ver karamelliserade kokosflingor och dekorera med n\u00e5gon \u00e4tlig blomma eller en kvist citronmeliss.
