L\u00e4gg ut skinkan p\u00e5 bakpl\u00e5tspapper och l\u00e5t st\u00e5 i ugnen tills skinkan blivit spr\u00f6d och knaprig, ca 8 min. Se till att den inte br\u00e4nns. L\u00e5t svalna.<br \/>\nSkala och sk\u00e4r palsternacka, jord\u00e4rtskocka och vitl\u00f6k i mindre bitar. L\u00e4gg allt i en kastrull och sl\u00e5 p\u00e5 gr\u00e4dden. Koka upp och l\u00e5t koka tills allt \u00e4r mjukt. K\u00f6r i mixer till len konsistens och smaka av med lite salt och peppar. Ta inte f\u00f6r mycket eftersom skinkan har ganska mycket s\u00e4lta i sig. St\u00e4ll in i kylen.<br \/>\nMortla basilikabladen med lite flingsalt och tills\u00e4tt sedan oljan, lite i taget. Peppra l\u00e4tt och smaka av. St\u00e4ll \u00e5t sidan. Rosta pinjen\u00f6tterna. Sk\u00f6lj och torka rucolasalladen. Sk\u00e4r ev bort kanterna p\u00e5 br\u00f6det och stek dem i sm\u00f6r tills de f\u00e5tt fin f\u00e4rg. L\u00e4gg p\u00e5 tallrikar och t\u00e4ck med rucolan. L\u00e4gg p\u00e5 palsternacks-jord\u00e4rtskockskr\u00e4m i \u00e4ggstorlek med hj\u00e4lp av en sked.
