Tills\u00e4tt k\u00f6ttf\u00e4rsen och r\u00f6r tills allt blivit en r\u00f6ra. Tills\u00e4tt vin, tomater, persilja, salt och peppar. L\u00e5t blandningen sjuda under lock i ca 45 minuter. G\u00f6r bechamels\u00e5sen. Ta pannan med f\u00e4rsen fr\u00e5n v\u00e4rmen och tills\u00e4tt rivebr\u00f6det och 2 l\u00e4ttvispade \u00e4ggvitor och r\u00f6r om v\u00e4l. (Detta moment kan man g\u00f6ra dagen innan, men avvakta d\u00e5 med att r\u00f6ra ner \u00e4ggvitorna och rivebr\u00f6det). Sk\u00f6lj och torka av auberginerna med hush\u00e5llspapper. Stek dem l\u00e4tt i lite raps- eller olivolja.Sm\u00f6rj en eldfast form eller ugnspanna ca 30x40x5 cm. Str\u00f6 \u00f6ver rivebr\u00f6d och t\u00e4ck bottnen med aubergineskivor. L\u00e4gg sedan ett lager k\u00f6ttf\u00e4rss\u00e5s och varva sedan tills allt \u00e4r slut. Avsluta med ett auberginelager. Hela detta moment kan g\u00f6ras dagen innan och f\u00f6rvaras i kylen, \u00e4ven bechamels\u00e5sen.<br \/>\nV\u00e4rm upp bechamels\u00e5sen f\u00f6rsiktigt. Vispa ihop \u00e4ggulorna och \u00e4gget och vispa ner i s\u00e5sen.
