D\u00e5 f\u00e5r man finare f\u00e4rg p\u00e5 steken och smakerna g\u00e5r in b\u00e4ttre i k\u00f6ttet. Passa \u00e4ven p\u00e5 att putsa bort \u00f6verfl\u00f6digt fett och se till att sv\u00e5len ligger upp\u00e5t, s\u00e5 den blir knaprig och god. Gillar man inte sv\u00e5len sk\u00e4r man bort den innan tillagning.<br \/>\nSk\u00f6lj och riv skalet av apelsinen, pressa ur saften. Blanda saft, skal, soja och socker.<br \/>\nL\u00e4gg \u00f6ver l\u00e4ggen i en ganska tr\u00e5ng ugnss\u00e4ker form och pensla med marinad. S\u00e4tt in i ugnen och l\u00e5t st\u00e5 i minst 3 timmar. Pensla k\u00f6ttet d\u00e5 och d\u00e5 med mer marinad och h\u00e4ll lite vatten i botten p\u00e5 formen s\u00e5 det inte blir torrt. Ta upp k\u00f6ttet efter drygt tre timmar och l\u00e4gg \u00f6ver p\u00e5 ett fat och st\u00e4ll tillbaka in i ugnen. H\u00e4ll \u00f6ver skyn\/marinaden som finns i formen i en kastrull. Eventuell \u00f6verbliven marinad sl\u00e5s ocks\u00e5 i kastrullen. Koka upp och sp\u00e4d med buljong eller vatten, beroende p\u00e5 hur salt det k\u00e4nns. Red av s\u00e5sen till lagom simmig (ej f\u00f6r tjock) konsistens.<br \/>\n<em>Rotmos: \u00a0<\/em>Koka k\u00e5lroten i ganska sm\u00e5 bitar i l\u00e4ttsaltat vatten ca 10 minuter och tills\u00e4tt sedan den skalade potatisen (halvera om de \u00e4r stora). Koka tills allt \u00e4r mjukt. Sl\u00e5 av vattnet (spar lite till att sp\u00e4 s\u00e5sen med) och l\u00e4gg i en redig sm\u00f6rklick. Anv\u00e4nd elvispen f\u00f6r att g\u00f6ra moset. Sp\u00e4d efter hand med matlagningsgr\u00e4dde till ett bra mos. Smaka av med salt och peppar.<br \/>\n<em>Karamelliserad k\u00e5lrot: \u00a0<\/em>Sk\u00e4r k\u00e5lroten i sm\u00e5 t\u00e4rningar. Sm\u00e4lt sm\u00f6ret i en stekpanna och bryn k\u00e5lrotst\u00e4rningarna runt om. Str\u00f6 \u00f6ver lite flingsalt. Tills\u00e4tt sockret och l\u00e5t det bryna med en stund. Tills\u00e4tt vattnet och koka ihop 5-10 minuter. K\u00e5lroten ska ha lite tuggmotst\u00e5nd och f\u00e5r inte bli mosig.<br \/>\nKoka upp s\u00e5sen och blanka av med 1 msk sm\u00f6r. Sk\u00e4r upp l\u00e4ggen, ringla \u00f6ver lite s\u00e5s och str\u00f6 \u00f6ver den karamelliserade k\u00e5lroten. Resterande s\u00e5s serveras i en kanna p\u00e5 sidan om. L\u00e4gg upp rotmoset och garnera med lite bladpersilja.
